Fighting inflammation in the kitchen
The following recipes are some of my favorites when it comes to fighting inflammation and fatigue. I’m admittedly a lazy cook, so none of these are too involved and can be made in an hour or less.

Veggie Frittata
You’ll need 8 eggs, 1 chopped sweet potato, broccoli, peppers, olive oil, salt and pepper. I like to add pumpkin pie seasoning as well as garlic and onion seasoning to my sweet potatoes.
- Preheat oven to 375°F
- Toss sweet potatoes and broccoli in olive oil and add seasoning
- Bake sweet potatoes and broccoli for around 12 minutes (until veggies are tender)
- Remove from oven and add eggs and peppers
- Place mixture back in oven and bake for 15 minutes or until eggs are firm
- Let cool and enjoy!

Tofu Stir-Fry
The laziest meal I cook. You’ll need tofu (firm), 1 yellow onion, garlic, and whatever vegetables you want. I usually use broccoli, jalapeños, bell peppers, and squash but it depends on what’s in season.
- Sautée onions and vegetables until they start to soften. Season to taste.
- Add tofu and cook until light browning on the tofu. Seasoning to taste.
- Remove from heat, move to serving dish, and add stir fry sauce. I usually use one from Wegmans
- Enjoy!

Brussels Sprouts Tacos
This is a play on a Cheesy Gordita Crunch. You’ll need a hard taco shell, a small tortilla, brussels sprouts, broccoli, peppers, cheddar cheese, and lettuce.
- Sautée vegetables until soft. Add taco seasoning while sautéing.
- Lay soft tortilla on a baking sheet. Put shredded cheddar cheese on top.
- Put cooked veggies in the hard taco shell and place on top of the soft taco shell with cheese. Lay on its side.
- Put in air fryer or oven and bake at 350°. Once cheese starts to melt, wrap other half of soft tortilla around the soft taco shell.
- Cook until soft tortilla starts to brown. Let cool and enjoy!

Baked Salmon with Lentils and Mixed Vegetables
For this on you’ll need two salmon fillets, dry lentils, veggies of your choice (I use broccoli, carrots, potatoes, bell peppers, and onions.
- Preheat oven to 400°
- Toss carrots and potatoes in olive oil and season with salt, turmeric, garlic powder, and onion powder. I also use pumpkin pie seasoning on my carrots
- In a sauce pot, combine one cup of lentils and three cups of water and bring to boil. Lower heat to a simmer and cover, stirring occasionally
- Add veggies to oven and bake about 20 minutes until carrots start to soften. Add bell peppers to mixture and put back into the oven
- Place salmon fillets on parchment paper on a baking sheet and season with salt, garlic powder, onion powder, and sliced lemons
- Bake salmon for 30 minutes
- Remove veggies and salmon from oven and let cool. Remove lentils from heat once soft. Enjoy!

Egg Bites
These are easy and can be personalized with basically whatever filling you want. I like to use broccoli, bell peppers, and onions.
- Preheat oven to 350°
- Sautée veggies until soft
- Grease a muffin tin
- In a separate bowl, whisk about 8 large eggs
- Put cooked veggies in the muffin tin and add eggs
- Bake for 30 minutes until eggs are firm
- Let cool and enjoy!

Sautéed Shrimp
You’ll need 12 shrimp, red pepper flakes, olive oil, onions, and garlic.
- Heat oil in pan on medium heat
- Add shrimp and season to taste
- Add onions and pickled jalapeños to pan
- Add garlic
- Sautée until shrimp is fully cooked (pink) and onions are brown
- Enjoy!
